My First Blog

Well what a week to be starting my blog on. 

Well after a weekend of Autumn treasure hunting in our Local woods
(which i didn't know existed)
we are starting to create a fantastic autumnal mobile to hang in the kiddies play room ( aka our conservatory) . We found a lovely small branch that had fallen during the high winds we have been experiencing, and lots of leaves which once all laminated will hang off of it.

This has created lots of open ended questions about all the colours and why they fall off?  and do hedgehogs use them as comfy blankets? (hedgehogs are our interest at the moment) 

As for the little man he loves feeling the leaves we have not laminated and have placed in our sensory bag this month. which is a small hessian gift bag I have placed items of a natural material i.e shells, coconut shells, pine cones, leaves and a few twigs ( remembering to wash your little ones hands after).  

Madison has been at her Infant school now for all most  half a term and it has rocketed by but finally We had that special visitor from Madison's class over for the the night in the form of a penguin named "Sparkle" the class mascot.

Madison came running out of her class holding this mini case beaming "I've got sparkle!". Not sure who was more excited me or Madison. She then proceeded to tell us that she got sparkle for being a really good girl who followed the golden rules all day. We were so happy for her as she has been dying to bring sparkle home for weeks and finally it was her turn. ( mum and dad breath a sigh of relief!). The constant disappointment on her face as she came home without it everyday was so heart breaking, but was a great bribery tool. ( come on all of us do it). Madison and Sparkle had a great time at Riverside Country park
 running and climbing (Madison's favourite past time) and then home for dinner. and promptly bathed and then Zzz.

Feeding my family has never been a chore but keeping meal times a fun experience and not just a daily occurrence is the challenge. So by offering up different foods i have kept it fun and interesting.

This weeks favourite meal was Homemade Paella.

all i have to say is there was clean plates all round .

To  recreate my version you will need ....

  •   Olive Oil
  • 2 cloves of garlic crushed
  • 1 Onion chopped
  • 2 chicken breasts - cooked and cut in to cubes
  • 1 red pepper
  • 300g paella rice
  • 1 - 2 tsp turmeric (personal taste )
  • 1 tsp dried chilli flakes
  • 1 tsp of smoked paprika
  • 600ml vegetable stock
  • 2 bay leaves
  • 100g frozen peas
  • chorizo sausage as much or as little as you would like roughly chopped
  • Tiger prawns again as little or as many as you like

  1. pre-heat an oven to gas mark 5, place a criss cross of foil on an oven tray, place the chicken breasts in the centre of the foil and pour on about 4 tbsp of water. make a parcel with the foil by lightly srunching the ends togeather in the middle, leaving a small gap for some of the steam to escape, cook the chicken for 1 hour or until cooked remove and once cool cut in to cubes.
  2. heat a little oil in a pan and cook the onion and garlic for 5 mins
  3. add the pepper and cook for 5 more mins.
  4. add the paella rice, turmaric, smoked paprika, chilli flakes and chorizo and give it all a really good stir.
  5. make up the vegetable stock (I use two cubes to 600ml of boiled water) pour over the rice mix and give a really good stir adding the bay leaves. put on a lid and simmer for 10-15 mins until the rice has absorbed the liquid.
  6. cook the prawns in a lightly oiled frying pan until cooked.
  7. Add the prawns, and peas  and cook for a further 5 mins.
  8. remove the bay leaves, stir in the cooked chicken and serve with toast triagles and lemon wedges
  9. last but not least enjoy x x
